Two vineyards, one in Polish Hill River and the other in Watervale (just north of the township). Fruit picked (it helps to get it from the vineyard this way), destemmed and crushed before pressing. Juice was fermented cool [as a cucumber], arrested with a meagre 8g/l of sugar...
